Avocado Corn Salad with Honey Lime Dressing

Seriously.  This is good.  Good enough that it could be a three course meal by itself because you'll want three helpings.

Salad Ingredients:
1 diced avocado
1 pint halved cherry tomatoes
2 ears of corn, boiled and cut
Handful of chopped cilantro
2 TBS chopped onion

Honey Lime Dressing:
3 TBS vegetable oil
Juice from one lime
1 TBS honey
Kosher salt & cracked pepper to taste.

I adapted this from Pam's recipe on For the Love of Cooking.  It's not that different than hers, but I always like to share changes if I have made any.

We served it alongside tacos, and I can think of a million dinners this salad could make better.  I have to thank my blonde cohort Heather for pinning this.  Her future husband is one blessed man! I expect to see all kinds of comments that life changing was no misnomer.
