People are always asking what we eat in our house. Our household has 3 meat-eaters and 1 meat-hater. "What do y'all eat?" they say. To me, it's simple to answer. "I mostly eat what they're eating with no meat. "
Why don't I eat meat? I don't like it. I don't have any mystic revelations or activist reasoning behind it. I have eaten like this since I was a little girl.
More and more people have a mixed menu household like ours, so I thought it'd be helpful to create a once a month blog series called Meatless Mondays where I share a month's worth of Meatless Monday Menus. The best part is that you can choose to add meat for non-conformists who don't want to eat rabbit food.
Meatless Monday September 2012 Menu
- Black Bean Tostadas (shown above): Spread canned black refried beans on a tostada. Cover in shredded cheddar. Bake at 350F until cheese is melted (around 5 minutes). Add avocado chunks, chopped green onions and Restaurant Style Salsa. If your kids aren't sure, tell them it's a giant nacho. There is no side suggestion for this one because they are pretty filling. My husband is 6'4" and is way full after 2 tostadas.
- Easy, Delicious Cheesy Lasagna: Don't fret. This is EASY as advertised. Serve this meatless lasagna recipe with a basic salad.
- Black Bean Burgers: I have yet to perfect a black bean burger patty that tastes better than Gardenburger Black Bean Chipotle Veggie Patties. Cook in a skillet or on the grill according to the directions. Dress with your favorite toppings and hamburger sauce of choice. Serve with Heaven Fries.
- Cream Cheese Veggie Wrap: Serve this with strawberries or chips. This veggie wrap will make your taste buds happy. I promise.
There you have it. The first Meatless Monday is in the books. It's monumental. Let's cut a ribbon. I don't have any ribbon. Maybe tomorrow morning I'll have my kids stretch out some toilet paper for me to run through like a football player at a homecoming game.
