Anything with avocados makes my heart go thump-thump, so when I saw this recipe by Two Peas & Their Pod, I new I would be making it as soon as I could get the ingredients.
BOOM! Here's my adaptation.
Holy Feta Guacamole Corn
2 avocados, pitted
1/2 cup feta cheese
1/2 small red onion, diced
1/2 jalapeno, diced
1/2 tsp sea salt
ground black pepper to taste
the juice of one lime or lemon
a pinch of season salt
half a bunch of cilantro, pulled off the stem
Process in a blender or a food processor until the consistency is smooth.
You could eat it with a tortilla chip, but if you have the opportunity, PLEASE put spread a little on some corn on the cob. Oh my!!!!!! FLAVOR EXPLOSION OF THE GREATEST KIND!
You will not believe how DELECTABLE this is. My husband did the laugh-because-this-food-is-so-enjoyable-you-have-to-do-better-than-say-mmmm. I have heard this a few times in our 10 years of marriage. It's like a first prize ribbon at the state fair. It is an honor!
