Let me publicly declare my love for cilantro. Seriously. I could eat Mexican food 3 meals a day. There is just something about cilantro that tells my brain- you are eating quality Mexican food. The thing is, I could spend all my money eating at Mexican restaurants and Mexican food is really cheap to make, and our house is on a special mission to recreate our favorite restaurant-like meals at home. For this reason, you'll probably see a ton of recipes popping up on Howdy Honey in the near future.
Cilantro Lime Rice

1 cup of Uncle Ben's Converted Brand Rice
1 cup of water
1 cup of low sodium organic vegetable broth
1/4 tsp sea salt
1/8 tsp Slap Ya Mama White Pepper Seasoning (or your favorite cajun seasoning)
3 TBS canola oil (divided into 1 TBS & 2 TBS)
Juice of 1.5 limes
3 TBS chopped cilantro
1. Bring water, 1 TBS canola oil & veggie broth to a boil in a pot.
2. While waiting on the pot to boil, pull cilantro off the stems and chop.
3. Add rice and let it boil until the water comes down even with the rice, then turn down to simmer.
4. Stir the rice often, keeping a close eye on it. Converted rice will cook faster than normal rice, so keep a close eyes so it doesn't burn. Depending on what kind of stove and pot you have, it should be around 5 - 10 minutes. You'll want the liquid to have boiled off. If you taste test it, it might feel a little stiff, but it shouldn't take effort to chew. It will fluff up just a tiny tad while you dump the remaining ingredients into the pot.
SERIOUSLY! This will be a staple in our house. It can be served with avocado slices as a side or a meal. Personally, can I recommend adding a few tablespoons of Chihuahua cheese to melt on a serving? Top it with chicken or chicken and black beans. Serve it on top of a salad! It even tastes good cold. Yes. Like pizza is good cold. I know that is a raving review. Try it and you'll see!
